This creamy garlic Parmesan pasta is perfect for busy evenings. It uses simple ingredients, comes together quickly, and delivers a smooth, restaurant-style sauce.
Ingredients
- 250 g spaghetti or fettuccine
- 2 tablespoons butter
- 4 garlic cloves, finely minced
- 200 ml heavy cream
- 60 g freshly grated Parmesan
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon chili flakes
- 2 tablespoons chopped parsley
- 120 ml reserved pasta water
Method
- Bring a large pot of salted water to a boil.
- Cook the pasta until al dente, following the package instructions.
- Reserve about 120 ml of pasta water before draining.
- Melt the butter in a large pan over medium heat.
- Add the garlic and cook for 30 seconds, until fragrant.
- Pour in the cream and gently simmer for 2 minutes.
- Add the Parmesan, black pepper, salt, and chili flakes.
- Stir until the cheese melts and the sauce becomes smooth.
- Add the cooked pasta and toss well.
- Add a little pasta water until the sauce reaches the desired consistency.
- Finish with chopped parsley and extra Parmesan.
Notes
- Grate the Parmesan finely so it melts evenly.
- Do not boil the sauce after adding the cheese.
- Add grilled chicken, mushrooms, or spinach for a more complete meal.
- The pasta is best served immediately.
