This creamy garlic Parmesan pasta is perfect for busy evenings. It uses simple ingredients, comes together quickly, and delivers a smooth, restaurant-style sauce.

Ingredients

  • 250 g spaghetti or fettuccine
  • 2 tablespoons butter
  • 4 garlic cloves, finely minced
  • 200 ml heavy cream
  • 60 g freshly grated Parmesan
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili flakes
  • 2 tablespoons chopped parsley
  • 120 ml reserved pasta water

Method

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta until al dente, following the package instructions.
  3. Reserve about 120 ml of pasta water before draining.
  4. Melt the butter in a large pan over medium heat.
  5. Add the garlic and cook for 30 seconds, until fragrant.
  6. Pour in the cream and gently simmer for 2 minutes.
  7. Add the Parmesan, black pepper, salt, and chili flakes.
  8. Stir until the cheese melts and the sauce becomes smooth.
  9. Add the cooked pasta and toss well.
  10. Add a little pasta water until the sauce reaches the desired consistency.
  11. Finish with chopped parsley and extra Parmesan.

Notes

  • Grate the Parmesan finely so it melts evenly.
  • Do not boil the sauce after adding the cheese.
  • Add grilled chicken, mushrooms, or spinach for a more complete meal.
  • The pasta is best served immediately.
